The Province of Canada team has been hard at work prepping for the holidays. In between packing orders, we were in the lab creating, perfecting, and "taste-testing" this Marble Sugar Cookie aka our 2017 Christmas cookie. Inspired by marble flat lays and phone cases, this cookie will transform your dessert platter into the beautiful surface every Instagrammer loves. Don't forget to save a few for the big guy on Christmas Eve.
1 cup butter (room temp)
1 cup sugar
1 large egg
2 tsp. baking powder
1 tsp. vanilla
2 3/4 cups flour
1 cup icing sugar
1 tsp milk
1/4 tsp. vanilla
Black food colouring gel
Preheat oven to 400°F
In a large bowl, blend butter and sugar, eventually adding egg and vanilla.
In a separate bowl, mix together flour and baking powder, then slowly combine with wet ingredients by adding 1 cup at a time.
Mix the last cup of dry ingredients into the wet with a wooden spoon.
Divide dough into 2 balls and cover each in plastic wrap. Chill them for 30 minutes.
On a floured surface, roll out to 1/8 inch thickness.
Cut out cookies using a circle cookie cutter (or the opening of a drinking glass). Place on cooking sheet with parchment paper. Tip: Dip the cutting tool into a bowl of flour before pressing into the dough for a cleaner cut.
For chewy cookies bake for 6 minutes. You should see the bottom of the cookie begin to brown.
Allow them to completely cool on a cookie tray before applying icing.
In a shallow bowl, mix together icing sugar, milk, and vanilla. Add more milk or icing sugar until it's a glue-like consistency.
Test the consistency by dipping a spoon into the icing and lifting it. The drizzle should settle into a smooth surface.
Next, lightly dip a toothpick into the black food colouring gel before dipping and dragging through the icing to create a swirly pattern.
When the icing becomes too colour saturated, create a new mixture in separate bowl or clear the surface with a spoon.
Dip the top of the cookie onto the icing. Lift and place on cookie tray.
